Gaya, le coup de foudre iodé Le lieu. Elégant, sans tapage. La salle respire, la cuisine se devine : ici, on laisse parler la mer et les gestes. Pas d’esbroufe, du tempérament. L’assiette. Bim, bam, umami. Ça claque, ça enveloppe, ça revient en vaguelettes. Les assiettes jouent la polyphonie Gagnaire : un produit net, des contrepoints malins, des reliefs acidulés. Exemple ? Un poisson juste saisi, jus réduit qui colle tendrement aux lèvres, condiment d’algues qui chuchote l’iode, légumes croquants pour la relance. Ailleurs, un sucré-salé marin (léger, précis) qu’une pointe d’agrume étire. C’est lisible, c’est vivant, c’est terriblement bon. La main du chef. On reconnaît la patte : le goût en avant, les jus qui font le lien, les textures qui s’embrassent sans se confondre. L’umami court ;discret puis profond, l’acidité est tenue au millimètre, jamais punitive. On sort avec la sensation rare d’une cuisine qui raconte quelque chose. Service précis, complice (saluez Alexandre pour moi), tempo tenu. On vous guide sans peser, on raconte l’assiette sans la surligner. La cave suit la mer : blancs nerveux, quelques ovnis bienvenus, accords qui mettent du vent dans les voiles. Portions & prix. Portions justes, sans lourdeur. Les tarifs sont au niveau de la maison et de la précision en cuisine : cohérents quand l’exécution est à ce point affûtée. Verdict. Une table qui donne faim d’y revenir. Gaya coche toutes les cases de la grande cuisine contemporaine : clarté du propos, sens du produit, émotions nettes. On sort heureux, iodé, léger — avec l’envie de refaire le voyage. ❤️
