Kozan 29/08/2025 The dining room is small, intimate, and spotless — no clutter, no fuss. Service is handled by a young team who are sharp, professional, and never in your face. Timing is flawless; even an extra sushi set, added to the Kozan and Hida menus, arrived without delay. The food is the star. Black cod, seabream, tuna — pristine, buttery, and bursting with clean, powerful flavor. Simple dishes, but executed with absolute precision. Tea and dessert finish things off nicely, but it’s the seafood that lingers in memory. In short: intimate setting, impeccable service, and food that sings. Authentic, refined, and worth every franc.

Depuis plus de 6 ans, nous venons régulièrement au Kozan, et chaque repas est une expérience unique. Machida, maître sushi, maîtrise toute la gamme des sushis avec une constance remarquable. Sa carte de mets froids est riche, précise et toujours parfaitement exécutée : riz d’une justesse rare, équilibre des saveurs, fraîcheur et température idéales. Chaque pièce sublime le produit, qu’il s’agisse de poisson, de coquillage ou d’un ingrédient plus délicat. En cuisine chaude, la cheffe Maki, son épouse, assure la même exigence et la même rigueur. Ensemble, ils ont fait le choix d’une discipline japonaise stricte : privilégier la qualité absolue et la disponibilité des produits plutôt que de céder à la quantité. C’est ce qui explique parfois la frustration de certains clients arrivés à l’improviste ou refusés malgré des tables libres. Mais c’est justement cette exigence qui garantit une expérience irréprochable et qui fait du Kozan un lieu d’exception. Enfin, l’expérience ne serait pas complète sans l’équipe en salle : Carla, Hikari, Marina, Karen et Anya. Toujours professionnelles, constantes et attentives, elles complètent à merveille la qualité de la cuisine par un service discret, précis et chaleureux.
