This place make croissants the right way. Most bakers nowaday sell greasy, dense products that are overbaked, The croissants I buy here have just the right structure. Tartelettes are on the dense side because they are kept in cold etalages; they can be brought back by warming them up at 120 and left in the oven 10m to let them loose the humidity they absorbed after baking. They taste surprisingly good, although I found somewhat a liberal use of sugar and coating, but this is personal taste.
