Ich war vor ein paar Tagen in der Trattoria Salento in Hamburg und habe dort eine unglaublich gute Carbonara gegessen. Die Soße war genau so wie sie sein soll – cremig durch Eigelb, nicht durch Sahne, und perfekt abgeschmeckt mit Pecorino und Guanciale. Die Pasta war frisch, perfekt gekocht und hat einfach fantastisch geschmeckt. Man merkt, dass hier echte italienische Küche mit viel Liebe serviert wird. Die Atmosphäre war entspannt und herzlich, man fühlt sich sofort wie bei Freunden. Auch der Service war sehr aufmerksam und hat auf charmante Weise noch einen passenden Wein empfohlen. Für mich gehört die Carbonara dort zu den besten in Hamburg und ich komme auf jeden Fall wieder.
