It’s okay, but, not sure if it’s helpful, if they made the following changes would be great: 1. Use a Mexican cheese; maybe jack? 2. Add a salsa, not just peppers; any green / red salsa that has some acidity would be great 3. Add something to make it more texturally interesting; fried potatoes spiced with paprika / cumin would be great.
