Le chiamano duchesse: sono panini piccoli, quasi cilindrici lunghi 10/12 cm, soffici e gradevoli se sono freschi, meno appetibili se sono del giorno prima. Qui vengono guarniti con varie leccornie, al meglio con foie gras e tartufo, ( E. 3.50 ): e fra gli altri con burro e (un)' acciuga (E.3.00), il cui ideale sarebbe però avere come base del pane toscano su cui appunto spalmarli. Duchesse /panino non per amanti dell'unto, ma come piacevole stuzzichino -aperitivo. Di solito io li accompagno (portandomeli a casa) con del vino da dessert, però ognuno ha i suoi gusti ( buttando l'occhio su qualche tavolino del dehors ho visto altro...che ovviamente non ho il coraggio di specificare).
