Una joya en la plaza de Atxuri que merece todos los elogios. "El Arandia de Julen" es un homenaje a la cocina tradicional vasca, esa de la amama, de toda la vida. Julen Eguiluz, el cocinero al frente, además de un carisma insuperable, tiene una mano prodigiosa para los clásicos: las alubias, la merluza, los pimientos, la morcilla… Todo preparado con una sencillez que emociona, y una calidad que se nota desde el primer bocado. El local rezuma solera y autenticidad, algo que se agradece mucho en Bilbao, donde a veces cuesta encontrar cocina casera sin artificios, hecha con cariño y producto del bueno. Las raciones son pantagruélicas, así que mejor ir con hambre y ganas de disfrutar. Hemos vuelto a salir encantados y con la firme intención de volver. Repetiremos, sin duda. Un 10 rotundo. Sitio obligatorio para quienes valoran la tradición y el sabor de verdad.
