A la BRASA: "La amo desde antes que la palabra amor brotara de los labios y naciera el fuego." No es una despedida ni un olvido. Una vez más, me ha sido un verdadero placer degustar con toda la profesionalidad del buen hacer de las manos de Nely a la brasa, como el hacer en equipo de Silvia, Yumei y Jesús. A los que nombro y a los que no, mi sempiterno agradecimiento por este tiempo compatido. El Museo de las Fuentes, cumple la más alta norma de hospitalidad, sentirse extraño en su propia casa en beneficio del cliente, y nunca me he sentido un extraño, todo lo contrario, atendido y haciéndome partícipe de la más alta aristocracia de los sentidos, el del gusto que unido a los restantes, el comensal siente y luego piensa tan adorable visión. Inmerso en un salón, la propia intimidad invita a confidenciar la relación gastronómica-secreta. La lengua no tiene huesos pero aplasta con deleite el paladar más exquisito. Mente culinaria compleja y gustos sencillos. La sabiduría de la alta alimentación unida a pequeños detalles que gustan cuando uno está saboreando. Modernidad versus clasicismo, progreso culinario sin dejar en el sabor la ambrosía de los ideales entrantes, antesala de la directa consumación de platos elaborados, sofisticados, reminiscencias de la cocina a fuego lento, como hacía la abuela. El Museo de las Fuentes, evoca a venero apuntes de un subsuelo gustativo que inicia como representación de quienes le han precedido en sus mesas. A Silvia, que posee el mayor grado de hospitalidad y sacrificio porque pese a estar cansada solo mira el complacer al cliente. A todos, mi afecto por siempre hasta una próxima vez.
