Właściciel jest niezwykłym człowiekiem, który stworzył to miejsce sercem. Jeśli tylko jest w lokalu (a jest bardzo często) to wita każdego gościa, opowiadając historię powstania tego miejsca oraz skąd pozyskuje najważniejsze składniki - mięso, bułki, sosy, marynaty-, których dostawców wybierał bardzo starannie i ma z nimi wieloletnie, bliskie relacje.
