Fratelli La Bufala si trova in pieno centro a Mestre, a due passi da Piazza Ferretto. Ci siamo andati per pranzo, senza troppe aspettative. Gran parte degli avventori sembravano essere habitué, e forse per questo inizialmente non ci hanno badato più di tanto. Ma niente di sgradevole: il servizio è stato comunque veloce e corretto. Ho mangiato tante pizze nella mia vita, ma non avendo una vera cultura in materia, non saprei distinguere tecnicamente una pizza fatta bene da una eccellente. Questa però, anche senza sapere nulla, si sentiva che era diversa dalle altre. L’impasto era soffice, leggero, ben cotto. Il cornicione alto, con qualche punta bruciacchiata che dava carattere. I condimenti freschi, ben bilanciati, con accostamenti che non stancano neanche a fine pizza. Abbiamo ordinato una con crudo e ciuffi di ricotta su base bianca, molto delicata ma gustosa. E un’altra con mozzarella, pomodorini e crema di basilico: profumata, equilibrata, e con un sapore che rimane. Oltre alle pizze, il menù propone anche primi piatti e vari dessert fatti in casa. Magari la prossima volta sarà un ottimo motivo per tornarci. Alcuni dicono che non sia più come una volta. Io, sinceramente, ho trovato tutto al posto giusto. Magari sono io che non me ne intendo abbastanza, ma se tutte le pizze “in calo” fossero così, non avrei proprio nulla da ridire.
