Mijn ervaring is inmiddels meer dan 30 jaar geleden en als ik mij niet vergis was Marcel toen al de chef en weet de naam van de eigenaars van toen niet niet maar maar die rusten nu wat. Ik herinner mij behalve het getier van de chef (zonder ziektes) maar wel met passie voor het vak en de gasten. Ik hoop ooit nog eens daar te kunnen aanschuiven. Behoorlijk wat tafelbewerkingen gedaan kip trancheren, crepes suzette, zeetong fileren. Pittig om daar te werken maar dat zag en proefde je er wel aan af.
