This place had been on my list for a while, so after a bit of a rubbish day, made the trek up - and I'm glad we did. We were welcomed and served by Liam, expertly running the floor with relaxed confidence. Drinks were incredibly quick - I think they're batched for the most part, but we were given an insight into the amount of work that goes into them and it's very impressive. The cocktails were served simply, with huge blocks of crystal clear ice that probably take all night to melt. Flavours are strong and complex, and the drinks are clarified beautifully. Whatever you do, don't skip the food. I never thought I'd get so hyped about tomatoes, but the dish of tomatoes with potato skin dashi and fennel pollen was so good that we ordered it twice. They were also very accommodating to dietary restrictions. An excellent bar - don't miss it.
