I first discovered the pizza from Empire when I was dining-in at another local establishment, The Wine Factor. I’d had the pizza there before and was pleasantly surprised at how good it was so I went back for more. Upon ordering however I was a bit perplexed to see my waiter (who was also doubling as clerk of the wine shop) leave the store and lock the door behind him, imprisoning me inside. He returned several minutes later and broke the harsh news to me that ‘they’ were closed today and I therefore could not have the pizza. I inquired as to who ‘they’ were because at this point I was fully under the assumption that the pizza was being made in the very much open restaurant I was at and ordering from. Not the case! Interestingly, whenever someone orders a pizza from them they’re putting an order in with Empire and then running down to pick it up. So the next time I was in the mood for this pizza I decided to cut out the middle man and go straight to the source. I’d been to Empire before for lamb wraps but hadn’t noticed that they did pizza. Returning back to the place I could see how I missed it — it isn’t mentioned on the menu. I thought perhaps I’d misunderstood and was in the wrong place until I saw the flat screen tv up high in the corner of the room displaying a still image of a pepperoni pizza. As far as I could tell this was the only mention of it. Craning my neck around the counter I caught a partial glimpse of what appeared to be a beautiful full-size wood fired brick pizza oven which was otherwise completely obscured from view by a wall of take away boxes. I’ve had the pizza here many times now and it’s the best in the area by far. In a brief conversation with the owner (or someone in a high standing position within the business at least) I was informed that all the pizza ingredients are specially imported from Italy. I was a bit baffled when he told me this because in one way it makes sense, the pizza is very good, but in another way if they’re making great pizza and also taking it very seriously importing the ingredients and all, then why is it not listed on the menu in the shop, why is the oven hidden, why all the secrecy? I simply do not know, but I’m happy to have the knowledge and wanted to pass it along.
