Tout d’abord commençons par remercier le gérant pour son acceuil. Niveau viande, étant fin connaisseur je me permet de souligner le persillage, viande tendre et juteuse, malheureusement elle n’était pas savoureuse. Le Josper est censé sublimer les qualités gustatives mais la noir de baltique de la maison Metzger n’est plus à la hauteur, remplacer un manque de saveur par le terme goût subtil est selon moi du pur marketing. Aux vues des prix pratiqués on s’attend à autre chose. Les accompagnement étaient très bons. Les fromage issus de petits producteurs étaient également d’une finesse incroyable. La viande restant le nerf de la guerre dans ce type d’établissement j’ai trouvé cette expérience décevante. Je reviendrai sans doute, mais sans convictions.

Service is always outstanding there. Meats are exceptional (Uruguayan for instance) and worth paying a bit more, selection has been thought through and this research should be appreciated. Wine list and rare chartreuse available. Tarte tatin and ice creams are delicious. Edit after going more often : Yep consistent quality in kitchen + service, best place to eat meat. The Josper oven really makes a difference and meat is perfectly sort of caramelized on the outside and super tender in the inside. I usually take a rather "light" meat grassfed fillet and I'm always amazed. Also now they do homemade ice creams that are divine. Thanks for making my belly happy !
