A love letter to Japanese fine dining. Excellently prepared sushi and sashimi with some Michelin worthy touches (a surprising dessert to lift the spirits; intentionally tongue-in-cheek ingredient pairings such as an ode to Finland through fresh umeboshi). Every dish and the sake pairing was exceptional. I left feeling sad that there were some items the chef prepared that night that I would never taste again. Due to the unique quality of the ingredients used, the seasonal properties of the fish, the additional seasonings and more, what I ate couldn’t be replicated. But what a wonderful thing to know I had eaten something truly unique and special. I won’t say anything about ‘authenticity’ because I don’t think that’s really something that can be assessed. What I will say is if you are a fan of Japanese food you will not be disappointed here.
