I sometimes grab our lunch at Baynes as its near my wife's work. Always thought of it as a one off and wondered how it competed with Gregs so looked it up and realised its a chain. The thing is they've managed to keep that local baker feel - mainly down to the staff being great and always giving you a warm welcome even when they are busy. On their website they say this about their founding father (originally a butcher) - "From the start he operated a sound set of principles. He was very efficient, set high standards and treated people with respect. He ensured the shops he ran were modern and kept to high standards, and that the meat sold was good value." I think Baynes has stuck with that.
