First round: Desserts skins were both not good, mango filling was excellent for the mochi and the winter melon paste was very homely But other than that this place stunned. Beef hor fun has proper wok hey. The stir fried intestines were masterful. Well seasoned, good textures and harmonious. Siu mai was legit as well, properly homemade not the frozen nonsense. Quite juicy In Edinburgh I didn't expect such authentic food. As a Chinese I can say, even in china this is considered very good. Basically god tier for Edinburgh Second visit: Roast duck was super flavourful, I loved it. Stir fried pork belly was masterful. I actl can't find any flaws at all, top tier all around from choice of ingredients, texture of the pork belly, seasoning, temperature control. MUST TRY lotus leaf rice was good too, filling was savoury and well perfumed. If I had to nitpick, the prices are a little expensive but for this skill level, they kind of deserve it if nobody comes close to them Round 3: Roasted pork is not quite right, but for Edinburgh standards it's good enough. Roasted duck was delicious as ever Yangzhou fried rice isn't authentic, but the chef's skills w the wok is the real deal, so it's still really good, esp w the chewy texture of the rice Beef stew was done restaurant style, the beef weren't evenly cooked but flavours were on point and it was a satisfactory rendition Round 4: Xlb not authentic, it's kind of like hargow filling but still ok as a dumpling Hargow good, the filling obviously homemade, juicy and umami and different from most Black bean Cheong fun taste was ok but ratio was very off, very little gravy to go with the huge amount of Cheong fun Lamb pot was delicious, the lamb umami comes thru strongly, lamb belly was tender, and the bean curd skin was correct too. Way better than the beef pot Round 5: Malai cake was stellar Century egg pork porridge was textbook, shredded pork was so tender despite cooking in porridge and the porridge base was properly umami too Twice cooked pork wasn't as good as before, the pork wasn't caramelised enough this time and some pieces of the scallions were not fully cooked, overall still good tho Chive pork prawn dumplings were bad. Skin was good as always but the filling was tough and sour, they said it's from the preserved bamboo shoots but there's simply no way, it tastes weird. First bad dimsum from them Round 6 Cheese tart special was decent, quite strong cheese flavour, bordering on savouriness The stir fried intestines at night wasn't good. During dinner it's busy and the chefs rushes the dish, so the intestines isn't crispy enough and was chewy. Kimchi was decent Tteokbokki is terrible, the sauce is very sweet and hardly spicy Custard bun was mainly sweet, not the best but acceptable
